Mainly headroom. The 350Vx is built for around 300 mailboxes and 2 TB of storage instead of the 150Vx's 100 users and 500 GB. Both run on the same VMware, Hyper-V, AWS, or vCloud Air deployment options and the same subscription licensing model.

Can we cluster multiple 350Vx instances for high availability?

Yes. The Virtual Message Archiver supports clustering, so if uptime matters more than a single VM can guarantee, you can run two or more instances together instead of relying on just one.

Does the 350Vx use hardware RAID like the physical appliance?

No, since there's no dedicated hardware. Instead, you configure RAID-1 or RAID-5 within the virtual disk subsystem, or mirror volumes to external storage over the network, whichever fits how your virtualization environment is already set up.
